I recommend buffing your stamina as much as possible, but if you're truly afraid of being killed, do what your heart tells you. If you go in the opposite direction and opt for max hearts in BOTW, you'll be stuck with just over two bars of stamina instead of the max of three. Keep in mind that 27 is still a huge number of hearts and, as long as I play responsibly, I never die anymore. Since I did that, I can only have 27 hearts instead of 30. I chose to go for max stamina in BOTW because I found myself inconvenienced by mountains far more often than by enemies.
